Portland, Oregon, a city known for its eclectic charm and thriving coffee scene, delivered a delightful surprise on my recent weekend getaway. My friend, a Portland local, had curated a list of must-visit spots, and Shroom Coffee sat proudly at the top. Intrigued, I ventured into the quiet neighborhood where this hidden gem resided.

Even before stepping inside, the intoxicating aroma of roasted espresso beans filled the air, a promise of the rich, dark nectar I crave each morning. Parking was a breeze, and as I entered, the warm, inviting atmosphere washed over me. The interior was a delightful mix of rustic and eclectic, a testament to the passion poured into its creation. Bright, cozy lighting illuminated the space, creating a perfect ambiance for both work and relaxation. A gentle hum of conversation mingled with the sounds of coffee being expertly crafted, and soft, almost imperceptible background music provided a subtle, yet vibey soundtrack.

My order was a testament to my adventurous spirit: a latte adorned with ground cinnamon and leaf art (don't judge!), a Dubai pistachio chocolate bar, and the cottage cheese pancakes. But it was the Dubai pistachio chocolate bar that truly surprised me. The unexpected, delightful crunch, reminiscent of the Indian snack mixture, provided a textural contrast that elevated the flavor profile to something truly memorable. And the cottage cheese pancakes, topped with fresh blueberries and raspberries, a hint of syrup, and a dusting of powdered sugar, satisfied my savory craving with a touch of sweetness.
